This dish was inspired by one of our favorite appetizers…fried dill pickles. I remember the days before you could find these on every bar menu in the country. How did we not think of this sooner? This dip brings together a creamy dill base and the flavor of fried dill pickles. You’re going to love the taste sensation and want to go back to dip over and over again.

INGREDIENTS:

  • 8 oz. package cream cheese-softened
  • ½ cup sour cream
  • 1 bunch fresh dill
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 24 oz jar dill pickles spears (save juice)
  • 1 pack Shake n Bake (or comparable brand)
  • small shallot
  • hot sauce (optional)
  • Cooking spray

Let’s start by making the fried pickles that are the star of this amazing dip.

  • Take half of the pickles from the jar and pat them dry.
  • Dice the pickles into ½ inch cubes and place into the shake and bake package.
  • Spray the air fryer basket with cooking spray and scatter your coated pickles into the basket with room to breathe.
  • Set the cook time for about 5 to 6 minutes at 385 degrees until golden. For best results, spray the pickles generously with cooking spray and flip halfway through. Once baked, set aside.

  • Chop the dill finely and add it to a bowl.
  • Finely dice one small shallot and add it to the bowl.
  • Dice the some of the remaining pickles until you have about 1 cup and add them to the bowl.
  • Then add the cream cheese, sour cream, garlic powder, onion powder, 2 Tbsp dill juice and shallot to the bowl and mix thoroughly.
  • Spread the mixture into plate or small platter.
  • Sprinkle fried pickle pieces on top.

a few tips…

This dip is best served fresh. You should even keep the fried dill pickle pieces separate until the last minute when you sprinkle them on top just before serving. Otherwise, the fried dill pickle pieces don’t maintain their little crunch and begin to get soggy. Nobody likes a soggy fried dill pickle…trust me. If you do have some leftover (which is highly unlikely), you will still enjoy eating the dip…just not quite as much.

You’ll notice in the ingredients that hot sauce is listed as an option. You know if you’re a hot sauce person or not. Feel free to add a few dashes (or even more) or just leave it out like we did. Either way, this dip will be delicious.

Unlike most recipes where we say to add salt and pepper to taste, this recipe leaves that out. That’s because pickles already tend to have quite a bit of salt content. It was plenty salty without adding any extra, and I just didn’t feel the the pepper would enhance the flavors. However, use your judgement and add some if you like.

what to serve with your dill pickle dip

There are lots of things that you can dip into this delicious pickle dip, but our favorite was simple Ritz crackers. They held up to the dip well and gave some extra texture and buttery flavor. You can also just use chunks of rustic bread, homemade garlic toasties, pretzel chips, bagel chips or even tortilla chips. If you want a healthier version, grab some celery or cucumber slices.

what if i don’t have an air fryer?

You can still make this recipe if you don’t have an air fryer. To make the fried dill pickle pieces, prepare them as instructed in the recipe. Instead of placing them in the air fryer, just use your regular oven and bake for about 15 to 20 minutes, until they are start to look toasted on the outside.

do we have a preferred cream cheese brand?

Yes!!! I understand that this is a personal preference, but I always use Philadelphia cream cheese (even though Philly is our sports rival here in Pittsburgh). There’s just something about the taste. That being said, any cream cheese brand will work just fine. So, stick with your favorite brand when making this dip.
