Melty Brie with Berries and Herbs Dip Recipe

- 8 oz Wheel brie cheese
- 6 oz Raspberries
- 6 oz Blackberries
- Honey
- Fresh thyme

- Brie cheese: Brie has a super mellow flavor, which makes it perfect for pairing with almost any other flavors. It also melts easily, and we love a good cheese pull. In this instance, we didn’t choose to remove any of the wax covering, but you can choose to remove some, especially the top, if you choose.
- Raspberries and blackberries: We love the look and flavor of raspberries and blackberries for this recipe, but you can change them out for any berry really. Even frozen berries will work if you let them thaw a bit before placing on the brie.
- Fresh thyme: Not everyone is a fan of adding an herby flavor to the brie and berries. You can choose to leave this element our of the recipe if you choose. You can also replace it with fresh rosemary. In this case, never choose to swap the fresh for dried herbs as the flavor will overtake the other ingredients.
- Honey: We love using local honey from the farmer’s market when it’s available, but we live in PA where the farmer’s markers are seasonal. So we just grab whatever’s at the grocery store. To top off your dip, you can also opt for hot honey instead for a bit of spice.

- Preheat the oven to 350 degrees.
- Place the wheel of brie in a small crock or in a pie plate.
- Score the top of the brie about ½ inch deep in a crisscross fashion.
- Place the berries on top and around the brie wheel.
- Sprinkle on some fresh thyme leaves.
- Cover and bake for 8 to 10 minutes until the brie melts.
- Remove from oven and drizzle with honey.

- Watch it: Brie melts so easily that it goes from being a wheel to a puddle in the blink of an eye. Keep a close eye on it and stop at the point of melting. As it cools, it will harden again. You can just pop it back in the oven for a few minutes to melt it again.

There are lots of things that you can dip into this delicious Brie with berries and herbs dip, but our favorite is some toasted crusty bread torn into chunks. You can also just use crackers, store made toasties, bagel chips or warmed flatbread or naan bread. If you want a healthier version, use some strawberries or sliced apples.

- Storage: Keep leftovers (if you even have any) covered in plastic wrap, in an airtight container or simply keep it in the crock in the fridge for up to 3 to 4 days. I don’t recommend freezing this dip.
- Dip prep: You can prepare this dip ahead of time, but don’t put it in the oven until just before ready to serve.
- Reheat: Since brie melts so easily, just pop the crock right back in the oven when you want to eat more of this delicious dip. You can also spoon out an individual serving and heat it in the microwave to enjoy the leftovers.
