Easy Fresh Peach and Tomato Bruschetta Recipe
I love this time of year when so much produce is fresh and available, and my top two favorite things to buy at the farm market are tomatoes, right off the vine, and peaches. This simple bruschetta recipe combines these ingredients for amazing results. It’s a dish you’ll want to go back to every time peaches are in season.

- 2 peaches (diced)
- 6 plum tomatoes (diced)
- 1 Tbsp fresh chopped basil
- 2 Tbsp fresh grated parmesan cheese
- 2 tsp minced garlic
- 1 Tbsp balsamic vinegar
- 2 tsp olive oil
- Balsamic vinegar pearls
- salt and pepper to taste

- Peaches: Choose fresh and ripe peaches, best when they’re in season in your area.
- Plus tomatoes: We’re using plum tomatoes because they tend to have less moisture. However, you can also use any other tomato. Just be sure to drain off the extra juice and remove the seeds.
- Garlic: Fresh garlic is always best, but you can also use pre-minced garlic from a jar or even garlic paste if you don’t want to take the extra time for chopping.
- Basil: This is a classic herb used in bruschetta. If you can’t find any fresh basil, replace it with about 1 tsp of basil paste.
- Grated parmesan cheese: Using fresh parmesan gives a recipe the best flavor. It’s worth the extra effort. However, in a pinch you can use pre-grated parmesan. The mellow and nutty flavor of parmesan pairs well with the other ingredients in this dip.
- Olive oil: We favor using extra virgin olive oil in our recipes for its rich flavor. This ingredient is a staple in Mediterranean food. It is high in monounsaturated fats and antioxidants that reduce inflammation.
- Balsamic vinegar: This vinegar has a deep and rich flavor, often used in dressings and marinades. When reduced, its sweetness comes out. It really heightens the flavor of this dip.
- Balsamic pearls: These have an intense balsamic vinegar flavor and look like a bit of caviar. They are a bit of a luxury item, but have such a dramatic presentation.

Stick around to the end, and I’ll tell you how we turned this into the perfect appetizer.
- Optional: Prepare the peaches by scoring the bottom with an x and submerging them in boiling water for about 1 minute. Then transfer to ice water. The skins should then remove easily.
- Dice the peaches and add them to a mixing bowl.
- Dice the tomatoes, draining off extra liquid and add them to the same mixing bowl.
- Chop the basil into thin ribbons and add it to the mixture.
- Add to the bowl the garlic, parmesan cheese, olive oil and balsamic vinegar.
- Gently mix the bruschetta ingredients together and salt to taste.
- Transfer the bruschetta to a serving dish and garnish with balsamic vinegar pearls.

my recipe tips
- Sweeten it up: I loved the flavor of this bruschetta and thought that the peaches on their own would be enough sweetness. However, some in the family thought that it could be a bit sweeter. Do accomplish this, add a tablespoon of granulated or brown sugar OR finish it off with some balsamic glaze.
- Plating: Some people choose to prepare a bruschetta appetizer by having it already plated in individual servings on toasty bread instead of keeping the bread separate. You can feel free to present it this way if you are eating it right away. However, if it’s going to sit at all, serve the bread on the side so that it doesn’t become soggy.
- Fruit options: Feel free to swap the fresh peach out for other favorite fruits with similar flavors, such as mango, nectarine, or apricots.

You can also just use chunks of rustic bread, crackers, store made toasties, bagel chips or even tortilla chips.

choosing the best peaches
Peaches, like all fruit, can be a little tricky to pick out the best and most ripe ones. You want to be sure that when you gently squeeze, it gives just a bit and isn’t rock hard. There should also be a pleasant sweet smell if the peach is perfectly ripe. A ripe peach will have a deep golden or yellow background, with no signs of bruising.
My grandma taught me this trick for when you get peaches that are just a bit underripe, pop them into a brown paper bag lunch bag and sit them on your counter (not in the fridge) overnight. By the next day they are typically just right.

- Storage: Keep leftovers (if you even have any) covered in plastic wrap or in an airtight container in the fridge for up to 4 to 5 days. I don’t recommend freezing this dip, as it may affect the texture.
- Dip prep: You can and should prepare this bruschetta ahead of time. It allows for the flavors to meld together for a better result if kept in the fridge overnight. Wait until the time of serving to garnish with the balsamic pearls for best results.
