- 1 8 oz wheel brie
- 8 oz hard salami slices
- 10 oz Colby Jack cheese
- 6 oz blackberries
- Optional: ¼ tsp red pepper flakes
- 1 tsp fresh thyme leaves
- Apricot jam
- Honey to drizzle
- salt & pepper to taste

- Colby Jack Cheese: Colby Jack is the perfect addition to this baked charcuterie dip since it has a mild flavor, adds some nice color to the dice and melts easily.
- Brie: Brie is known as the melting king of cheeses. If you want a good cheese pull, go with brie every time. The mild milky flavor takes on the flavors around it and makes it perfect for this dish with so many elements going on.
- Salami: We chose hard Italian salami for this dish. You could also go with spicy salami. However, I would skip any of the salamis that are rimmed with pepper, as the flavor tends to overpower.
- Blackberries: Blackberries that are sweet and ripe are perfect for this charcuterie dip, but sometimes they can be a bitter or sour, especially if off season. If this is the case, instead choose blueberries, raspberries, diced strawberries, peaches or dried apricots. The goal is to balance out the saltiness of the cheese and meat with some sweetness in the fruit. You can also used frozen fruit for this dish if that’s what you have on hand.
- Honey: We wanted to stick with sweet and salty for the flavors in this dip. However, you could also choose to skip this altogether since there’s already berries and apricot jam in the recipe or add a little heat with some hot honey. In addition to adding sweetness, it also gives the dip a beautiful finished look.

- Preheat the oven to 375 degrees.
- Cut the brie into 1-inch pieces and layer in the bottom of a 2-quart baking dish.
- Cut the Colby Jack cheese into ½ inch chunks and randomly place it among the pieces of brie.
- Next create some rosettes with out of your salami and sandwich those between the pieces of cheese.
- Add some blackberries and small dollops of apricot jam here and there on top of your charcuterie ingredients.
- Sprinkle with the fresh thyme leaves and salt & pepper to taste.
- Place in the oven and bake for 20 to 25 minutes until cheese is melty and bubbly.
- Drizzle with honey and sprinkle on a few red pepper flakes.

- Customization: This recipe is just a starting place for creating the charcuterie dip of your dreams. Instead of berries, go more savory and add some veggies like diced pepper or cherry tomatoes. Change up the cheeses, the meat and even the sweet addition. For the cheeses, stick with ones that chunk well and don’t crumble, like Colby Jack, Gouda, Mozzarella pearls, Havarti, or Monterey. Meat substitutes might include cooked ham, pepperoni, spicy salami, or deli turkey.
- Add some heat: If you like some spice in your charcuterie you may want to add some spicy salami, red pepper flakes, hot peppers or hot honey.
- Looks matter: When choosing items for this baked charcuterie dip, think about color. For example, there are lots of cheeses you can choose. So, don’t go with 2 that are the same color. After all, we eat with our eyes first.
- Other additions: Of course, there are other things that could go in this charcuterie dip that we left out. Instead of going the sweet route, add olives or pickle pieces instead of berries and honey.

If you want a healthier version, try dipping some fruit like peach or apple slices into the cheesy goodness.

- Storage: Keep leftovers (if you even have any) covered in plastic wrap or in an airtight container in the fridge for up to 3 to 4 days. I don’t recommend freezing this dip, as it may affect the texture.
- Dip prep: You can prep this dip ahead of time, but once it’s baked serve immediately. Once it starts to cool, it just doesn’t work.
- Reheat: You can use the microwave, air fryer or oven to reheat this dip. However, be warned that it’s never quite the same as when you first bake it and enjoy it fresh. The cheeses don’t remelt very well.
