  • ½ cup extra virgin olive oil
  • ⅓ cup balsamic vinegar
  • 1 Tbsp minced garlic
  • 1 Tbsp basil paste
  • 2 tsp dried Italian seasoning
  • 1 Tbsp capers
  • 1 Tbsp finely chopped shallot
  • ⅓ cup fresh grated parmesan cheese
  • salt & pepper to taste

  • Olive oil: We favor using extra virgin olive oil in our recipes for its rich flavor. This ingredient is a staple in Mediterranean food. It is high in monounsaturated fats and antioxidants that reduce inflammation and is often used as a substitute for butter in cooking.
  • Italian seasoning: Italian seasoning is a blend of dried herbs that pair perfectly with Italian dishes and often includes elements such as basil, oregano, rosemary, thyme, and marjoram. It will sometimes also include parsley, garlic powder, or red pepper flakes.
  • Balsamic vinegar: This dark and intense vinegar is the perfect pair with olive oil as the base for this dipping oil. It’s both sweet and acidic and absolutely delicious.
  • Garlic: Fresh garlic is always best, but you can also use pre-minced garlic from a jar or even garlic paste if you don’t want to take the extra time for chopping.
  • Basil paste: I love the intensity of flavor that the basil paste offers. You can, of course, replace this with fresh or dried basil also. Ratios are to your liking.
  • Capers: These little flavor packed buds offer an intense salty, tangy, and slightly mustard-like flavor that really enhances any dish.
  • Shallot: The mild flavor of a shallot pairs perfectly with this dip, but you can also use sweet onion if it’s diced very finely.
  • Parmesan cheese: This cheese is famously used in Italian dishes and always ramps up the flavor to the next level with its nutty and sharp flavor.

  • Choosing a vinegar: We used balsamic vinegar in this recipe, but you can change it up to your liking with a more milk vinegar like red wine or white balsamic. Each vinegar has a distinct flavor. Choose your favorite.
  • Additions: There are so many things that you can add to your bread dipping oil. For example, try finely minced green or kalamata olives, finely minced sun dried tomatoes, fresh or dried thyme, fresh or dried rosemary, red pepper flakes, parsley, garlic powder, onion powder, lemon, anchovy paste, honey or pesto.
  • Don’t make my mistake: I used the parmesan that I had on hand, but I wish that I’d chosen one that was more finely grated. It was still yummy but didn’t stick to the bread as well.

There’s only one answer to what should be served with this dipping oil…delicious fresh crusty bread. It’s doesn’t matter what kind as long as it’s fresh. Tear it into pieces and dip right in. You can also use fresh flatbread or naan bread. Yum!
