how to make CREAMY pina colada dip
INGREDIENTS:

- 8 oz. package cream cheese-softened
- 2 tsp vanilla
- 1 cup powdered sugar
- 1 Tbsp rum extract
- ½ cup pineapple preserves plus 1 dollop
- ½ cup sweet coconut flakes

- Cream cheese: We prefer using Philadelphia brand cream cheese for this dip, though any brand will work. If you haven’t had a chance to leave it out to soften, just pop it in the microwave for about 20 to 30 seconds.
- Vanilla: A quality vanilla really does elevate any recipe. Skip the imitation and use a vanilla extract.
- Rum extract: all the flavor without the nasty hangover.
- Pineapple preserves: Our grocery does not carry pineapple preserves, and it’s vital to this recipe. So, I grabbed it online HERE.
- Sweet coconut flakes: Coconut has a strong flavor and isn’t liked by everyone. The way that we have applied to the edges only allows for those that don’t enjoy the texture or flavor to skip it.

Stick around to the end, and I’ll tell you what to serve with this sweet dip.
- With a hand blender, mix together cream cheese, rum extract and vanilla.
- Mix in ½ cup pineapple preserves.
- Then slowly mix in the powdered sugar.
- Spread the mixture into the bottom of a pie dish.
- Rim the top of the dip with the coconut and place the reserved dollop of pineapple preserves in the center.
- Serve with cookies, Nilla wafers or graham crackers.

my recipe tips
- When too much is too much: Don’t my mistake. I put in a splash of rum extract, like the recipe calls for, but then thought…”Hey, why not a bit more?” And then I added more. That was a mistake. Less is definitely more.
- Real or fake: You may be asking if you can use real rum in this recipe. The answer is…I don’t know. We don’t keep rum in the house, and I didn’t want to buy an entire bottle just to try it out. Plus, I like to keep these dips family friendly. If you try it and it tastes yummy, please let me know.
- Pineapple preserves?: This was my second attempt at this recipe. The first has crushed pineapple instead of pineapple preserves. We changed it out for the extra sweetness and less liquid. Even after we drained the crushed pineapple, it made the dip soupy.

There are lots of things that you can dip into this delicious pina colada dip. A sweet dip calls for something sweet to pair it with. Our favorite dipper that we tried was short bread cookies. We also enjoyed donut holes and wafer cookies. You can also try graham crackers, sugar coated chips or cut up pound cake. If you want something a little healthier, go with some fruit like pineapple chunks, strawberries or mango slices.
If you’re having a get together with lots of appetizers, this dip recipe is great alongside this sushi dip or this charcuterie dip. Then there will be a little something for everyone.
do we have a preferred cream cheese brand?
Yes!!! I understand that this is a personal preference, but I always use Philadelphia cream cheese (even though Philly is our sports rival here in Pittsburgh). There’s just something about the taste. That being said, any cream cheese brand will work just fine. So, stick with your favorite brand when making this dip.
