  • 2 – 5.3 oz packages garlic and fine herbs Boursin spread
  • 20 oz can pineapple tidbits
  • 6 to 8 strips thick bacon
  • ¼ cup brown sugar
  • Honey

ingredient information:

  • Boursin: There are several flavors to choose from for this soft, creamy cheese. Any flavor will work for this recipe, but we chose the garlic and fine herbs. You can use one, but we wanted to the dip to go a little farther and went with 2. For a party, you might want to buy it by the case.
  • Pineapple tidbits: You’ll see in the pictures, that I actually ended up using pineapple chunks instead of tidbits. They worked just fine, but the tidbits would have been a better fit on a crackers.
  • Bacon: We used applewood smoked bacon, but any flavor of bacon will do.
  • Brown sugar: Brown sugar is simply white sugar mixed with molasses that gives it that caramel coloring. We chose light brown sugar for this recipe, but you can also use dark brown sugar with little difference in the overall flavor. Be sure to pack it down when measuring.
  • Honey: You can also swap this out for hot honey for a little zing.

instructions:

Stick around to the end, and I’ll tell you our favorite way to serve it.

  1. Cut the bacon into ¼ pieces.
  2. In a skillet, fry your bacon until just short of crispy.
  3. Remove all but about 1 Tbsp of the bacon grease, leaving the bacon in the pan.
  4. Drain the pineapple and add it to the skillet.
  5. Cook the pineapple with the bacon on medium heat until it is slightly browned and caramelized. Salt very lightly.
  6. Add the brown sugar and continue to cook until incorporated. Drain off extra grease that has accumulated.
  7. On a small platter or plate, spread out the Boursin cheese.
  8. Spoon on the pineapple and bacon mixture.
  9. Drizzle with honey.
  10. Optional: Add a drizzle of hot sauce.

my recipe tips

  • Spice it up: A little heat is often well paired with sweet and salty. There are a few ways you can add some heat to this recipe…use hot honey instead of regular honey, add a splash of hot sauce to the bacon and pineapple when cooking, or add a small dash of red pepper flakes to the mixture, each according to your liking.
  • Swap the protein: If you’re not a bacon person (trust me, I’ve met them), you can replace the bacon in this dish with another protein, like salami, pepperoni, or ham. Cook in the same fashion.

🍽️ serving ideas

There are lots of things that you can dip into this delicious Boursin with bacon and grilled pineapple dip, but our favorite is some toasted crusty garlic bread. I have the perfect recipe that you can check out HERE. You can also just use chunks of rustic bread, crackers, store made toasties, bagel chips or even tortilla chips. If you want a healthier version, use celery sticks or cucumber slices.

If you’re having a get together with lots of appetizers, this dip recipe is great alongside this buffalo chicken dip or this mint chocolate chip dip. Then there will be a little something for everyone.

DATE NIGHT DIP

This is the kind of dip that I like to create for a cozy night in with the hubby. It goes together quickly and easily. Plus, the serving size is small, and it’s a light dip that we can enjoy without guilt that we’ll regret the calories the next day. Pair it with your favorite drink, like the super fun dirty sodas and other amazing mixed drinks over on Instagram with @ashleylaurentassano. Add a good movie, and you have the perfect date night in.

recipe notes

  • Tips: Check out my recipe tips above to help you get the best results for this super yummy dip.
  • Storage: Keep leftovers (if you even have any) covered in plastic wrap or in an airtight container in the fridge for up to 3 to 4 days. I don’t recommend freezing this dip, as it may affect the texture.
  • Dip prep: This dip is best when prepared fresh, with the bacon and pineapple coming right from the skillet. If you aren’t able to make that happen, prepare everything ahead and then reheat the bacon and pineapple on the stovetop (not in the microwave) and layer it onto the Boursin just before serving time.
