I’m sure that you’ve seen a version of this recipe somewhere on social media, but we’ve given it a few tweaks to amp it up a little more. With how easy this goes together, you’re going to want to make this roasted tomatoes and burrata dip over and over again. Start dinner with it tonight.

INGREDIENTS:

- 20 oz cherry tomatoes
- 3 Tbsp olive oil (divided)
- 1 tsp Italian seasoning
- 2 cloves garlic
- 2 balls burrata cheese
- Bunch fresh basil
- Fresh grated parmesan (optional)
- Hot pepper flakes (optional)
- salt & pepper to taste

- Cherry tomatoes: Cherry tomatoes are named for their resemblance to the fruit and have a sweet-tart flavor. They come in a variety of colors and are very versatile for using in all types of recipes since they are equally delicious as is or when roasted.
- Olive oil: We favor using extra virgin olive oil in our recipes for its rich flavor. This ingredient is a staple in Mediterranean food. It is high in monounsaturated fats and antioxidants that reduce inflammation and is often used as a substitute for butter in cooking.
- Italian seasoning: Italian seasoning is a blend of dried herbs that pair perfectly with Italian dishes and often includes elements such as basil, oregano, rosemary, thyme, and marjoram. It will sometimes also include parsley, garlic powder, or red pepper flakes.
- Burrata cheese: Burrata is an Italian season made from mozzarella and cream. It has a beautiful milky flavor and buttery texture which oozes out when cut into. You can find this in the dairy sections of most major grocery stores now in a plastic tub container.
- Garlic: Fresh garlic is always best, but you can also use pre-minced garlic from a jar or even garlic paste if you don’t want to take the extra time for chopping.

Stick around to the end and I’ll give you a few tips to make this dip the very best it can be.
- Preheat the oven to 375 degrees.
- In a bowl, mix together the cherry tomatoes, olive oil, minced garlic, Italian seasoning, salt & pepper.
- Place the tomato mixture in a 2-quart baking dish or deep pie dish. Bake for 30 to 35 minutes until the tomatoes are bursting.
- Remove the dish from the oven and place the balls of burrata in the center. Cut them open and let the cheese ooze into the tomatoes.
- Drizzle a little more olive oil on top, sprinkle with kosher salt and add pepper flakes if desired.
- Cut the fresh basil into thin ribbons and sprinkle it to the top of the dip.
- Optional: grate some parmesan cheese on top.

my recipe tips
- Trade out the fresh basil: You’ll see that the recipe calls for fresh basil added at the end. However, our grocery stores didn’t have any available. So, we went with the next best thing, basil paste, and I think it was actually better than the original recipe. Just squeeze about 1 Tbsp into the tomato mixture prior to baking. It really did elevate the flavor.
- Seasoning: Be generous with the salt. Also feel free to add some black pepper to taste.
- Preparing garlic: Fresh garlic is totally worth the effort, but I hate mincing it. Instead, I’ve gone to using this little gadget that you just rock back and forth for the perfect fresh minced garlic.
- Customization: You can really make this dip your own by adding or removing things according to your own tastes. Some ideas for things you can add into the tomato mixture include thyme, rosemary, extra garlic, a splash of hot sauce, capers, onion powder, minced shallots, crumbled bacon or prosciutto, diced salami, or roasted red peppers.

There are lots of things that you can dip into this delicious dip, but our favorite is some toasted crusty garlic bread. I have the perfect recipe that you can check out HERE. You can also just use chunks of rustic bread, crackers, store made toasties, bagel chips, pita, flatbread or even tortilla chips. If you want a healthier version, use celery sticks.

what if i can’t find fresh herbs?
You can always substitute dried herbs for fresh, but it will affect the flavor. Trust me, it’s worth the extra expense to grab some fresh herbs (or even grow your own). If replacing fresh herbs with dried, use only about 1/3 as much.

- Storage: Keep leftovers (if you even have any) covered in plastic wrap or in an airtight container in the fridge for up to 3 to 4 days. I don’t recommend freezing this dip, as it will affect the texture.
- Dip prep: You can prepare the tomato mixture ahead, but I would hold off baking and adding the burrata until just before serving. It really is best when it’s hot and fresh.
- Reheat: You can use the microwave, air fryer or oven to reheat this dip. My preference is to place it back in the oven until warmed through and the cheese is melty. Whatever method you decide to use, keep a close eye so that the dip does not become overworked or even burnt.
