Sweet and Creamy Chocolate Covered Strawberries Dip Recipe
Chocolate covered strawberries have always felt like such a decadent treat, only to be enjoyed on special occasions…but life is too short! Something this delicious should be enjoyed as often as possible. And so we’ve created this creamy and irresistible chocolate covered strawberries dip that you can keep going back to over and over again. There’s no reason to wait until next Valentine’s Day to enjoy this exceptional treat.

INGREDIENTS:

- 8 oz. package cream cheese-softened
- 1 tsp vanilla
- 1 cup powdered sugar
- milk of your choice
- 1 lb fresh strawberries
- 12 oz Semi-sweet chocolate chips
- 1 Tbsp coconut oil

- Cream cheese: We prefer using Philadelphia brand cream cheese for this dip, though any brand will work. If you haven’t had a chance to leave it out to soften, just pop it in the microwave for about 20 to 30 seconds.
- Vanilla: A quality vanilla really does elevate any recipe. Skip the imitation and use a vanilla extract.
- Strawberries: We live in a day and age when there is no off season for strawberries. How lucky are we? To choose the best and sweetest, I always give them a sniff at the grocery store. Just because they’re red doesn’t mean they’ll be good, but you can never go wrong if they have that sweet strawberry smell to them. For this recipe choose a size that not too big or too small so that you can fit several on top.
- Milk of your choice: The milk in this recipe is only used if you need to alter the consistency of the creamy base. We did not need to use it at all since the strawberries added some of their own juice.
- Semi-sweet chocolate chips: Semi-sweet chips are a great pairing with the sweet strawberries. However, you can also choose milk chocolate or dark chocolate chips if that’s your preference.
- Coconut oil: Just a small amount of coconut oil helps to make the chocolate smooth and even glossy when it melts. You can subsitute this in equal parts with vegetable shortening.

- With a hand blender, mix together cream cheese and vanilla.
- Then slowly mix in the powdered sugar until smooth.
- Add a splash of milk as needed to reach a creamy consistency.
- Mince some strawberries very small until you have about ¼ cup. * Do not cut up all of the strawberries because you will need 6 whole berries for later in this recipe.
- Mix the chopped berries into the cream cheese mixture.
- Transfer it to a serving dish and set aside.
- Place the chocolate chips and shortening into a microwave safe dish.
- Microwave on high, stirring every 15 seconds until all the chocolate is melted.
- Lay out some wax or parchment paper on a flat surface.
- Dip 6 of the strawberries into the chocolate and place on the wax paper.
- Take the remaining chocolate and pour a thin layer onto the top of the cream cheese base. Be sure not to make it too thick.
- Before the chocolate sets, place the chocolate-covered strawberries around the top and one in the middle.
- Refrigerate until the chocolate sets up.

my recipe tips
- Watch out: If you decide to add a bit of milk to the creamy base, don’t overdue it. It can very quickly turn from creamy to gooey to pure liquid.
- Thinner is better: When adding the chocolate layer to the top, more is not better in this case. Be sure to pour the chocolate while it is still melty and not thickening yet. Add only a thin layer so that when it hardens, you can easily break into with a serving knife.
- What to do with extra berries: You will likely have extra strawberries left at the end of making this dip, as well as some additional melted chocolate. For me, it was a no brainer to turn them into some chocolate covered strawberries for snacking later.
- Other fruit options: You could customize this dip recipe for other fruit also. Replace the chopped strawberries and chocolate covered strawberries on top in a 1 to 1 ratio with chunky and juicy fruit like mango slices, pineapple chunks or fresh peaches with the skin removed. To be honest, I haven’t tried these yet but know they will be absolutely delicious. Let me know if you make it with another fruit option.

There are lots of things that you can dip into this delicious chocolate covered strawberries dip. We chose something not too overly sweet and went with shortbread cookies. Other options might include chocolate wafers, Oreo cookies, graham crackers, or more strawberries.

do we have a preferred cream cheese brand?
Yes!!! I understand that this is a personal preference, but I always use Philadelphia cream cheese (even though Philly is our sports rival here in Pittsburgh). There’s just something about the taste. That being said, any cream cheese brand will work just fine. So, stick with your favorite brand when making this dip.

- Storage: Keep leftovers (if you even have any) covered in plastic wrap or in an airtight container in the fridge for up to 3 to 4 days. I don’t recommend freezing this dip, as it may affect the texture.
- Dip prep: You can and should prepare this dip ahead of time as it will need to sit in the fridge for at least a couple of hours for the chocolate to set up properly.
