Crockpot Hot Corn Bacon and Cheese Party Dip Recipe

Sweet corn and savory salty bacon, together with ooey gooey cheese…what could possibly be a better party food than that? The best part is that you toss it all in the crockpot ahead of time so that it’s ready when your guests arrive with little fuss. I’m going to be serving this when we all gather to watch the Steeler’s home opener. It’s the perfect game day dip.

INGREDIENTS:

  • 1-8oz package cream cheese
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 2 cups shredded sharp cheddar cheese
  • 2-12 oz packages frozen corn
  • 1 can cream corn
  • 1 package ranch seasoning
  • 1 cup bacon crumbles
  • Salt to taste

  • Cream cheese: We prefer using Philadelphia brand cream cheese for this dip, though any brand will work.
  • Cheddar cheese: There’s a reason why cheddar cheese is so popular…it’s freakin’ delicious! Choose your level of sharpness for this recipe. You can buy pre-shredded, but grating it yourself is really the way to go. It will combine with the other ingredients better and has a better flavor since it doesn’t include anti-caking agents.
  • Frozen corn: Any brand of frozen corn will work for this recipe. You can also swap it out in equal parts for corn fresh off the cob or canned corn.
  • Cream corn: I know creamed corn is not everyone’s cup of tea, but don’t skip it. This ingredient adds just the right amount of sweetness and a little more creaminess to the dip.
  • Ranch seasoning: If you don’t have any ranch seasoning on hand, you can make your own mix with this recipe from My Baking Addiction.
  • Bacon: Thick cut apple wood smoked bacon is recommended for this recipe, though you can use any bacon that you have on hand. If using a thinner bacon, add a couple of extra strips to the recipe. I don’t recommend taking a shortcut by using prepackaged bacon pieces since the flavor and texture are not preferred.

  1. Prepare the bacon crumbles by frying 6 to 8 strips of thick bacon to crispy and them crumbling into small pieces.
  2. Place all ingredients into the crockpot.
  3. Set to low and cook for 2 to 3 hours, stirring occasionally.
  4. When all of the cheese is melted and ingredients are fully incorporated, the dip is ready.

  • Bacon matters: The type of bacon you add to this dip matters and will greatly affect the flavor profile. We used maple bacon and decided it was a bit too sweet. You may want to use a hickory or applewood smoked bacon instead.
  • Seasoning: Be generous with the salt. Season during each step of the cooking process. Also feel free to add some black pepper to taste.
  • Spice it up: If you’re a person who likes your food a bit spicier, you can add some red chili flakes or a few splashes of hot sauce of your choice. The amount is up to you based on your personal preference for heat level.

There are lots of things that you can dip into this delicious corn and bacon dip, but our favorite is simple tortilla chips. You can also just use chunks of rustic bread, crackers, pretzels, or bagel chips. If you want a healthier version, use celery sticks or baby carrots.

If you don’t already have one at home, this is the perfect time to grab yourself a crockpot. Believe me, they’re a lifesaver. Ours is on a constant rotation for family meals and party favs. For this recipe, we used a 3 quart size like THIS ONE. In all honesty, if you’re making this for a party I would double the recipe and use a 6 to 8 quart crockpot instead, like THIS ONE or THIS ONE.

  • Storage: Keep leftovers (if you even have any) in an airtight container in the fridge for up to 3 to 4 days. I don’t recommend freezing this dip, as it may affect the texture.
  • Dip prep: This dip is prepared a few hours ahead of serving time to give it time to cook in the crockpot. However, you can also cook the bacon a day or two before so that it’s ready for everything to just be tossed in together.
  • Reheat: You can use the microwave to reheat this dip for individual servings. Or you can also warm the entire dip back up in the crockpot on low until it’s heated through.
