Refreshing Creamy Mint Chocolate Chip Dip Recipe

Spread the love

I’m known for my special order at our local ice cream shop, mint chocolate chip ice cream made into a hot fudge sundae. They see me and start making it without me even having to order. It’s creamy, chocolatey, refreshing and sweet all at the same time. This mint chocolate chip dip allows me to enjoy those flavors at home, no melting. I know you’re going to love it too.

Now let’s get right to the good stuff…

  • 8oz package cream cheese-softened
  • 1 cup powdered sugar
  • 1 cup white chocolate chips
  • ½ Tbsp coconut oil
  • 1 tsp vanilla
  • 1 cup heavy cream
  • 1 ½ tsp mint extract
  • ½ cup mini chocolate chips (plus 1 Tbsp for garnish)
  • Green food coloring

ingredient information:

  • Cream cheese: We prefer using Philadelphia brand cream cheese for this dip, though any brand will work. If you haven’t had a chance to leave it out to soften, just pop it in the microwave for about 20 to 30 seconds.
  • Powdered Sugar: This is not to be confused with white sugar. It’s very finely milled and combined with a small amount of an anti clumping agent so that it appears like snow. It melts into the cream cheese to form the perfect creamy base to take on other flavors.
  • White chocolate chips: You’ll find the white chocolate chips right beside the semi-sweet ones in your grocery store. You can also substitute with white chocolate wafers.
  • Coconut oil: Just a small amount of coconut oil helps to make the chocolate smooth and even glossy when it melts. You can subsitute this in equal parts with vegetable shortening.
  • Vanilla: A quality vanilla really does elevate any recipe. Skip the imitation and use a quality vanilla extract instead.
  • Mint extract: We used peppermint extract that we found in the spices section of the grocery store.
  • Heavy whipping cream: aka heavy cream is a rich, high-fat dairy product that makes the most delicate and delicious whipped cream with very little effort. If you don’t want to make homemade whipped cream, you can substitute it with Cool Whip.
  • Green food coloring: Yellow and blue make green if you don’t have green on hand. You can use liquid or paste food coloring.
  • Mini chocolate chips: Semi-sweet chips are a great pairing with the mint flavor. However, you can also choose milk chocolate or dark chocolate chips if that’s your preference. If you can’t find mini chocolate chips, run a knife through standard chips before adding them to the recipe.

instructions:

Stick around to the end, and I’ll tell you our favorite dipper for this dip.

  1. Place the cup of white chocolate chips and coconut oil in a microwave safe bowl and microwave for 15-second intervals, mixing in between, until fully melted. Set aside to cool slightly.
  2. Pour heavy cream into a cold bowl and use an electric hand mixer to whip it into soft peaks. Set it aside.
  3. In a large mixing bowl, combine the cream cheese and powdered sugar with the hand mixer until smooth.
  4. Mix in vanilla, mint extract and melted white chocolate.
  5. Fold in the whipped cream until well blended.
  6. Add green food coloring, one drop at a time and mix in until you reach the desired minty color.
  7. With a spatula, fold in ¾ cup mini chocolate chips (reserve the rest for garnishing).
  8. Transfer the mixture to a serving dish.
  9. Top with the remaining mini chocolate chips.

my recipe tips

  • Perfectly minty: I tested the peppermint flavor to get it just right for my personal taste, which 1 1/2 tsp of mint extract. However, you can adjust the flavoring to your own liking. If you’re going to do this, I recommend starting with just 1 tsp and then go literally a drop at a time until the level is just right for you.
  • Perfect whipped cream: Start with very cold heavy whipping cream. Also, cool down the bowl and beaters in the fresher for about 15 minutes prior to whipping. Begin beating the cream with your hand mixer. However, don’t overwork the cream. Once you see the heavy cream start to thicken, pay close attention. As soon as it reaches the right consistency, stop whipping.
  • Coloring: To get just the right shade of green, start with just a drop or two. Then add very slowly and mix each time until you reach the desired light green minty color.

  • Tips: Check out my recipe tips above to help you get the best results for this super yummy dip.
  • Storage: Keep leftovers (if you even have any) covered in plastic wrap or in an airtight container in the fridge for up to 4 to 5 days. I don’t recommend freezing this dip, as it may affect the texture.
  • Dip prep: You can and should prepare this dip ahead of time with the exception of the the topping. It’s best when left in the fridge overnight. However, at the time of serving, allow it to sit out so that it returns to room temperature and garnish at the last minute with some mini chocolate chips.
