Quick and Easy Mexican Street Corn Dip Recipe
This simple dip goes together quickly and has of the amazing flavors of your favorite Mexican corn. We used a shortcut that gives the flavor of roasted corn without the fuss. I wish that I’d created this recipe so much sooner so that I could have been sharing it with friends and family at every special occasion. We’re getting close to 100 dip recipes created and shared by myself here on this site, and my husband (self-appointed taste tester) says this one is his favorite one so far.

how to make simple mexican corn dip
INGREDIENTS:
Gather your ingredients and get ready to make this amazing dip, good enough to eat as a meal. This post may include affiliate links. As an Amazon Associate I earn from qualifying purchases.
- 4oz package cream cheese-softened
- ½ cup sour cream
- 2 tsp garlic powder
- 1 tsp onion powder
- ½ cup shredded cheddar cheese
- 1 ½ cups fire roasted corn
- Lime
- Bunch cilantro
- Tajin seasoning
- Cotija cheese
- Optional: 1 Tbsp jalapeno peppers (diced)
- Salt to taste
ingredient information:
- Fire roasted corn: I found already fire roasted corn in our freezer section. You can also purchase regular corn and use the tips below to make your own.
- Cream cheese: We prefer using Philadelphia brand cream cheese for this dip, though any brand will work. If you haven’t had a chance to leave it out to soften, just pop it in the microwave for about 20 to 30 seconds.
- Sour cream: Our favorite brand of sour cream is Daisy for both the flavor and texture. You should use your favorite. This can also be swapped out for Greek yogurt.
- Cheddar cheese: There’s a reason why cheddar cheese is so popular…it’s freakin’ delicious! Choose your level of sharpness for this recipe. You can buy pre-shredded, but grating it yourself is really the way to go. It will combine with the other ingredients better and has a better flavor since it doesn’t include anti-caking agents.
- Garlic powder: Choose your favorite brand of garlic powder. You can also swap this out for garlic paste, but use only half as much.
- Onion powder: If you are a big fan of onions, you can swap this ingredient for finely diced onions, green onions or shallots.
- Cilantro: This herb can be controversial. Did you know that we each have a gene that makes us either love it or hate it? I personally love cilantro, but if you on are the other side of the gene pool, feel free to leave it out. You can replace it with fresh parsley instead, but this has a slightly bitter flavor.
- Lime: We used the juice of 1 lime, but you can play with the amount based on your personal taste. If you use bottled lime juice, I would start with 1 tsp.
- Tajin seasoning: This is a traditional Mexican seasoning that has a nice lime flavor to it. It’s key to the flavor profile of this dip. So, don’t skip it. If you can’t find any in your grocery story, add some smoked paprika and more lime to your dip.
- Cotija cheese: This is a traditional Mexican cheese with a nice saltiness to it and not carried in some grocery stores. I you can’t find any in your area, you can replace it with grated parmesan or crumbled feta.
- Jalapeno peppers: We skipped this ingredient, but definitely add some finely diced peppers to your dip if you like heat.

Stick around to the end, and I’ll tell you what to serve with it to make it a real party.
- Allow the corn to thaw. Drain it and pat it dry with a paper towel. Add it to a large mixing bowl.
- To the same bowl, add the softened cream cheese, sour cream, onion powder, garlic powder, shredded cheddar and prepared corn and mix until combined.
- Chop a bunch of cilantro (to taste) and mix in (about ÂĽ cup chopped).
- Optional: incorporate the diced jalapenos.
- Squeeze in the juice of one lime.
- Season with salt to taste.
- Garnish generously with Cotija cheese.
- Sprinkle on Tajin seasoning.

my recipe tips
- From scratch: If you would like to make roasted corn from scratch, there are a couple of ways to go about it. First would be to take frozen corn and saute it in a skillet with a little butter or oil until you see the kernels begin to brown. Or you can place corn on the cob directly onto the grill, brushed with butter, and give it a bit of a char. Then just cut it from the cob.
- To cilantro or not to cilantro: I know that cilantro can be a very controversial ingredient. There are some people that absolutely hate it. If you are one of those people, feel free to leave it out. You can replace it with a flat leaf parsley or Thai basil. However, the cilantro really does give this dip that authentic Mexican corn flavor.
- Spice it up: If you are a fan of spice, be sure not to skip adding jalapeno peppers to your dip. You can also add a few splashes of your favorite hot sauce.

There are lots of things that you can dip into this delicious Mexican corn dip, but our favorite is tortilla chips. Of course, you can also use things like pretzels, chips, toastie bread or your favorite dipping veggie.

This is the kind of dip that I like to create for a cozy night in with the hubby. It goes together quickly and easily. Plus, the serving size is small, and it’s a light dip that we can enjoy without guilt that we’ll regret the calories the next day. do we have a preferred cream cheese brand?
Yes!!! I understand that this is a personal preference, but I always use Philadelphia cream cheese (even though Philly is our sports rival here in Pittsburgh). There’s just something about the taste. That being said, any cream cheese brand will work just fine. So, stick with your favorite brand when making this dip.
make it a meal
You can take this dip a bit further and use it as the perfect topper for a Mexican street corn taco bowl. Start with some taco meat, add your chosen veggies, a little more shredded cheddar and then top with the corn dip for layers and layers of deliciousness.

- Tips: Check out my recipe tips above to help you get the best results for this super yummy dip.
- Storage: Keep leftovers (if you even have any) covered in plastic wrap or in an airtight container in the fridge for up to 3 to 4 days. I don’t recommend freezing this dip, as it may affect the texture. When reserving the leftovers, add another sprinkle of Cotija cheese and Tajin.
- Dip prep: You can prepare this dip ahead of time. As a matter of fact, the flavors get better with time. Wait until the time of serving to garnish with the Cojita cheese and Tajin.
